½ Rack baby backs per person (at least)
Dry rub ¼ to ½ cup per rack)
Apple Chips or Chunks
BBQ Sauce (optional)
Remove the membrane from the back of the ribs. Dry rub your ribs. Refrigerate overnight or you can go directly to the BBQ with them.
Get your BBQ temperature to 250 to 275 degrees.
Take some foil, add some chips to it and close it up to make a wood chip-smoking packet if you are using propane.
Once your cooker is holding 250 to 275 you are ready to go.
Place the ribs on the Q bone side down, but not directly over the heat source.
The ribs should cook for four to five hours. Add the wood chips, packet or chunks to create smoke the way you like to cook. After about 4 hours wrap in foil and return to the smoker for about ½ to 1 hour, until done to your liking.
When done add some sauce and cook/grill a bit more as you like.
